Heat the oil/ghee in a large saute pan or deep skillet on medium heat. Then add the chopped peppers and cook for about 3 minutes.
Add the sliced onions and garlic and cook on medium heat for about 8-10 minutes, stirring occasionally.
While this cooks, you can get the pork chops ready by seasoning them with 1/4 teaspoon salt, the pepper and the paprika powder.
Add the halved tomatoes, 1/2 tsp salt, and the chopped herbs to the peppers & onions. Stir and cook for about 5-6 minutes.
While the tomatoes soften, heat the ghee/butter in another large skillet on medium high heat.
Cook the seasoned pork chops about 4 minutes on each side. Then remove from the pan and let rest for a minute.
Spoon about 1/2 cup of the sauteed peppers on top of each pork chop and enjoy! You can also add some homemade oven fries to this dish or some mashed cauliflower.
